The new favorite spice, at least in my neck of the woods, is sriracha sauce. I’ve even made meatloaf with it instead of ketchup. And who doesn’t like bacon? I do know a lot of people that don’t like SPAM — that wonderful mystery meat in a can that our parents ate all the time. Here we combine all these favorites with some peas and carrots for color and crunch to come up with a unique quiche that is really quite good.
Ingredients:
- 1/4 cup sriracha, plus more for garnish
- 3 tablespoons soy sauce
- 3 tablespoons toasted sesame oil or peanut oil
- 1 (12-ounce) container SPAM, diced
- 12 slices of bacon. A good-quality, naturally cured one is best.
- 1/8 cup of sliced green onions, green part only, for garnish
- 2 cups of frozen peas and carrots
- 2 cups of Monterey jack cheese
- 2 pie crust pans
Filling:
Slice bacon into smaller strips and SPAM into small cubes so they can cook into large-sized bits for easy mixing. In a skillet or large pot on high heat, cook bacon till almost brown, remove and place on paper towel to soak up extra grease. Drop in cubes of SPAM and cook until browned. Remove and put these on another paper towel. Save at least 1/4 cup of grease to add to egg mix. Prepare rest of ingredients and put away till ready to assembly and cook.
Final Assembly and Cooking:
Mix standard quiche base with sriracha, soy, oil and reserved grease. Add peas, carrots, bacon and SPAM to pie pans in equal portions and mix together thoroughly. Add quiche mix to pie pan. Add cheese on top and then green onions on top of that. Bake at 375 for 45 minutes or till golden brown. Remove and pack it up for the rink, or serve it. This one is also good substituting corn for peas and carrots.
