Jalapeño Burger Quiche

Concocted to taste similar to a Carl’s Jr./Hardy’s Jalapeño Burger that is not on their menu anymore. The first time I made this, I actually bought two $6 versions without the buns and chopped that straight into the quiche. This is a little less expensive, and I think tastes a little better.

Ingredients:

  • 2 or 3 1/2 pound high quality hamburger patties (80/20 or a 80/20 mixed with ground brisket cut)
  • 1/2 cup jalapeño slices (fresh is better, but you can use pickled, too)
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped red onions
  • 2 cups pepper jack cheese
  • 1/3 cup fat-free mayonnaise
  • 1/4 teaspoon paprika
  • 1/4 teaspoon curry powder
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon salt
  • 2 pie crust pans or bacons crusts if you want it to taste like a bacon burger

Filling:

First, get all the chopping done. You can also chop the jalapeños if you prefer them that way. Put all of that aside in refrigerator till you’re ready for final assembly. Take your hamburger patties and season them with a little salt and pepper and cook them till medium by your preferred method. Grilling is always the best way for me. While these are cooking, combine mayonnaise, paprika, curry, cayenne and salt in a small bowl and thoroughly mix to make the Santa Fe Sauce. Put this aside in refrigerator till cooking time. Once burgers are done, remove from grill and let them rest for a few minutes to cool down. Then chop them into small cubes and refrigerate till final assembly.

Final Assembly and Cooking:

Prepare your favorite crust, I suggest either a plain pie crust or bacon crust to make it a jalapeño bacon cheese burger. Preheat oven to 375. Heat chopped burger to make it a little easier to handle if you’ve refrigerated it. Combine chopped burger, tomatoes, onions and jalapeños in bowl and mix well. Proportion mixture into two pies. Then, in another mixing bowl, combine basic filling mix with Santa Fe Sauce. Once combined and fluffed a bit, pour into pies. Top with cheese equally on each pie and pop it into oven for 40 to 45 minutes. Remove from oven, and they are ready to go.
