Real Elvis Special Quiche

This one I believe is a more accurate Elvis style quiche. Since Elvis loved Country Ham with Red-Eye Gravy, this variation of Elvis’ favorite breakfast is, at least in my opinion, more accurate.

Ingredients:

  • 2 pounds of country ham steak, chopped into 1/4” squares
  • 1 cup of strong, brewed, black Coffee
  • 1/2 cup of water
  • 1/4 stick butter
  • 2 cups Monterey jack cheese or American cheese
  • 2 biscuit crusts pie pans

Filling:

Melt down butter in a large skillet, over medium-high heat. Add ham and sauté until cooked a golden brown on all sides. Remove ham from skillet, allow it to cool and refrigerate till ready for use. Add coffee to drippings still in skillet. Cook down for about 5-6 minutes on a hard simmer to concentrate flavors. Pour into a container for refrigeration till final assembly.

Final Assembly and Cooking:

Preheat oven to 375. In a large mixing bowl, combine eggs and half and half and beat till fully mixed. Add Red-Eye gravy in with pepper and salt to taste. Warm prepared ham, if necessary, and place equally into two pie crusts. Then pour liquid mixture equally into two pies. Top with 1 cup of shredded cheese on each pie, add a little more seasoning of your choice, I usually only put a little pepper on top. Place pies in middle of oven and bake for 40 minutes or until cheese is a golden brown. Remove from oven and pack it up for the rink.
